We don’t know about you, but we don’t want to consume any food that isn’t fresh off the grill during the summertime. But let’s face it, sides can be a challenge, as we can only eat so much grilled asparagus, which brings us to the topic of today’s chat: corn on the cob! This is the season to be nabbing corn on the cob from your local farmer’s market and grilling it up right. While there’s no wrong way to eat grilled corn on the cob, we have a few ideas for sprucing corn up. Let’s take a look!
Spicy Honey Garlic
One of our absolute favorite flavor combinations is sweet and spicy, not too sweet, not too spicy, but somewhere perfectly in the middle, and this recipe nails it. Your corn will come out tender, juicy, and full of flavor. This recipe combines garlic, chili pepper, honey, chili sauce, and a little fresh cilantro to give you corn on the cob delicious enough to make a meal out of. Get the full recipe here!
Elote – Mexican Street Corn
Excuse us while we salivate. If you haven’t tried out some Mexican street corn, we can’t recommend it enough. Seriously, the amount of flavor packed into elote is insane; think cheesy, creamy sauce exploding with flavors of lime, chiles, and cilantro. We betcha can’t eat just one cob. We know we certainly can’t. Get the full recipe here!
Grilled Chili Lime
Few flavors scream summertime quite like chili lime. This recipe is super simple because you let the compound butter do all the work while your corn is on the grill. The best part being that you get to control the chili to lime ratio. No backyard BBQ will be complete without this tangy, spicy corn. Get the full recipe here!
Garlic Butter
Garlic butter makes everything taste better and you can just jot ‘grilled corn on the cob’ down on that list. A lot of the recipes we’ve talked about thus far have been bursting with flavor, and not that garlic butter isn’t, it’s just a lighter flavor burst with no spicy aftertaste. We love to slap some garlic butter on our corn before we grill it, and of course, garlic butter is never complete without a little parmesan on top. (And fresh parsley if you’re feelin’ crazy!) Curry (Animal Kingdom Copycat)
Don’t be alarmed when you look at this recipe and see a laundry list of spices, we promise you, it’s worth every speck of spice. And just a heads up, if you have trouble finding any spices at your local grocer, we recommend ordering them online, you will be glad you did. Get the full recipe here!
