Chop the leaves of beetroot to make it last longer
When we remove the leaves of beetroots, they last longer. This is because water loss through the leaves causes the roots to shrivel up faster. Remove all of the straggly leaves from the beetroot, then clip off the stems close to the root base.
After thoroughly cleaning our beets, keep them in a box with damp sand or peat substitute packed between each one to prevent them from drying out. Make sure these boxes are stored somewhere cool to avoid moisture loss.
