A green shakshuka for those who want a low-carb option
Eating healthy can be time-consuming, and boring, but it does not have to be. Are you looking for a healthy, flavorful dish to make in the mornings that will take minimal effort? Try this remix of a common breakfast staple: the shakshuka. The best part is that everything comes together in one single pan, although we recommend you use one that is non-stick.
This version is made out almost exclusively of greens: asparagus, jalapeños, cabbage, and spring onions. Stir-fry the veggies, starting with the asparagus and the white parts of the onion. Once the asparagus is tender add the rest of the ingredients, but save the leaves for last, since they cook quickly. Finally, crack the eggs into the pan.
